Maple cheesecake


For the crust
2 ½ cups gingerbread crumbs or gingersnap crumbs
½ cup sugar
½ cup melted softened butter
1 Tbsp fine orange zest

press in a spring form pan

for the cheesecake

8 oz white chocolate melt and set aside!
2 # cream cheese beat until fluffy and lightened in color
½ cup and 2 Tbsp sugar
add the sugar to the cream cheese

4 whole eggs and 2 egg yolks
add these 1 at a time, mixing thoroughly

2 Tbsp flour
1 Tbsp vanilla extract
¼ cup maple syrup

add these and the chocolate and blend

pour into a 10-inch spring form pan. Cook at 250 for about 1 hour and 10 minutes or until firm. Cool all the way before serving!
